“Lucky” Black Eyed Pea Salad

Lucky Black Eyed Pea Salad

Did you know it’s considered lucky to eat black eyed peas on New Year’s Day? The tradition is in rooted in the south, where they are usually prepared warm with salted pork or bacon, but I love them in this cold salad. After the year we’ve all had, we could all use a little extra luck, right?

Delicious, Healthy Eating

After weeks of eating rich holiday foods, I’m always eager to start the new year with this salad. Its packed with veggies and the beans (black eyed peas) are protein packed, so it makes a great vegan main dish or a delicious side.

How do you make black eyed peas?

Its also super-simple to make using cooked black eyed peas. I buy canned (or frozen cooked) black eyed peas and toss them with diced red onion, green onion, red bell pepper and parsley. Next add ground cumin and drizzle with rice vinegar and olive oil. The salad tastes better after marinating for few hours or overnight.

Delicious Anytime

Even if you don’t get a chance to make these for New Years, this recipe is a wonderful and healthy way to start the year. And, frankly, I don’t think there’s any expiration on Luck, so why not give them a try!

This Vegan Black Eyed Pea Salad is a healthy (and possibly lucky) way to start your New Year. Or serve it anytime as a quick and delicious side dish.


Ingredients

Scale
  • 1 can black eyed peas, drained and rinsed⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1 red bell pepper, diced⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1 small red onion, diced⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1 teaspoon ground cumin⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 tablespoons fresh parsley, chopped⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 tablespoons fresh dill, chopped⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 green onions, diced⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 tablespoons red wine vinegar (or rice wine vinegar)⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 tablespoons olive oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • salt and fresh ground pepper to taste⠀⠀⠀

Instructions

  1. Combine all ingredients in a large bowl and toss to combine. Season with salt and pepper to taste. Cover and refrigerate for at least an hour or as long as overnight. ⠀
