Blueberry Lemonade Popsicles from Karviva

These popsicles are my new favorite healthy summer hack for myself and my kiddos. They are incredibly refreshing and hydrating — the perfect treat after a workout or a sweaty afternoon at summer camp. Plus they are ridiculously easy to make using a couple bottles of Karviva Ace Recovery Juice in their Bold Berry Lemonade flavor. I was first introduced to Karviva juices a few months ago by a friend and I love that they are made with real, whole fruit ingredients, with limited added sugars and are packed with good-for-you ingredients like collagen, antioxidants and electrolytes from real, whole superfoods.

How to Make Blueberry Lemonade Popsicles

To make these popsicles, I simply dropped a few fresh blueberries into popsicles molds and filled them the rest of the way with Karviva Ace Bold Berry Lemonade. Then I stuck them in the freezer. Thats it! The next day, we had delicious popsicles that my kiddos absolutely loved (me too). To make them extra fancy, right before serving, I dipped each popsicle in a mix of lemon zest, fresh mint and sugar. The combo added the perfect finishing touch, although the pops would be equally tasty and refreshing on their own.

Perfect Popsicles for Summer Snacking (or Post-Workout)

I especially love that, thanks to the addition of Karviva, these popsicles are more than just fruit juice. Karviva juices are made with all sorts of superfoods designed to help the body recover after workout out. Things like antioxidants from Himalayan berries, natural collagen sources and a blend of natural minerals from sesame seeds for electrolyte replenishment. This is excellent for hydration after a workout. They’re also a great snack to help the kids rehydrate when the get home from camp, soccer or other outdoor activities.

If you’re looking for fantastic popsicle molds, here are my absolute favorites (I’ve tried a TON of them). These are individual molds (easy to remove just one pop), they have a great classic popsicle shape, stand up well in the freezer and they are made of stainless steel so their pretty indestructible.

Description

These Blueberry Lemonade Popsicles could not be simpler to make using Karviva Ace Recovery Juice as the base. They are tasty, refreshing and incredibly hydrating on a hot summer day. 


Ingredients

Scale
  • 2 bottles Bold Berry Lemonade Karviva Ace Recovery Juice
  • 1/4 cup fresh blueberries
  • zest of 1 lemon (optional)
  • 4 fresh mint leaves, finely minced (optional)
  • 1 tablespoon granulated sugar or monk fruit sweetener (optional)

Instructions

  1. Distribute blueberries evenly between 6 popsicle molds.
  2. Pour Karviva Ace Bold Berry Lemonade to fill each mold. Add popsicle sticks. Freeze for at least 4 hours or overnight before serving. 
  3. To add lemon sugar garnish: Just before serving, combine lemon zest, mint and sugar (or sweetener) in a small bowl until thoroughly combined. After removing popsicles from their molds sprinkle the sugar mixture onto each pop until it sticks. Serve immediately.
