Try Teriyaki Burger Bowls for an easy plant-based meal

Teriyaki Burger Bowls

Build-your-own bowls have long been a go-to dinner option in our house. Not only are they an easy way to feed picky eaters (by letting them customize their meal), its also a great way to incorporate more plants into your diet.

How to cook kid-friendly and plant-based

This Teriyaki Burger Bowl incorporates all my kids’ favorites: edamame, avocado and burgers (in this case, Lightlife plant-based burgers), layered over rice and drizzled with teriyaki sauce. Customize your ingredient list based on what your own family enjoys (or what you find in your fridge!). and enjoy!

Description

These quick & easy Teriyaki Burger Bowls incorporate all my kids’ favorites: edamame, avocado and burgers (in this case, Lightlife plant-based burgers)


Ingredients

Scale
  • 4 plant-based burgers, prepared according to package directions
  • 2 cups cooked brown rice (or quinoa)
  • 1 cup baby spinach
  • 1 cup thinly sliced cucumbers
  • 1 cup steamed, shelled edamame
  • 1/2 cup sliced radishes
  • 1 cup shredded carrots
  • 2 green onions, sliced
  • 1/4 cup red onion, thinly sliced (optional)
  • 1 large avocado, seeded and thinly sliced
  • 1/2 cup prepared teriyaki sauce

 


Instructions

  1. Prepare burgers and rice according to package directions. 
  2. Arrange toppings on a large platter along with sauce and prepared burgers. 
  3. Divide rice evenly among four serving bowls. 
  4. Encourage each diner to choose a variety of vegetable toppings, starting with the spinach and adding smaller toppings as desired. Top with a prepared plant-based burger and drizzle with teriyaki sauce.
