This 5-Ingredient Chicken Soup is the Pantry Meal We Need Now

With so many people cooking at home while social distancing, meals built around high-quality pantry staples are in high demand. This 4-Ingredient Chicken Soup is a delicious, all-natural meal made with common ingredients from the pantry and freezer.

What is a Pantry Meal?

“Pantry meals” are enjoying a surgeon popularity thanks to social distancing. Everyone is prolonging supermarket trips for as long as possible. But what are Pantry meals, exactly? “Pantry meals” are typically built around shelf-stable dry goods like pasta, rice, beans or lentils, canned and boxed goods, items from the freezer and even some fresh foods that have a long shelf-life (think parsley, onions and parmesan cheese). They are wonderful for stretching the time between grocery store visits since you can stock these items well in advance.

This 5-Ingredient Chicken Soup is an ideal pantry meal. It is warm, nourishing, easy to make and all of the ingredients can easily be stored in the pantry or freezer indefinitely.

With so many people cooking at home while social distancing, meals built around high-quality pantry staples are precious. This 4-Ingredient Chicken Soup is a delicious, all-natural meal made with common ingredients from the pantry and freezer.

When making this 5-Ingredient Chicken Soup or any pantry meal for that matter, be sure to check ingredients carefully. Some common shelf-stable items are filled with a surprising number of preservatives. The good news is, shelf-stable does not necessarily have to mean “full of preservatives.”

My favorite Aneto Natural Chicken Broth is the foundation for this soup. Unlike many other boxed broths available in supermarkets, Aneto’s broths are made with 100 percent natural ingredients. Their recipe is almost identical to homemade (just on a larger scale). Because their broth is made with nothing more than bone-in chicken, fresh vegetables, olive oil and sea salt, the flavor is unmatched and the ideal starting point for this simple 4-Ingredient Chicken Soup.

How to Make 5-Ingredient Chicken Soup

This soup consists of:

  • One diced, fresh onion
  • One cup of cooked, diced chicken (you can either used leftover chicken if you have some, a frozen chicken breast thats been thawed, diced and quickly sautéed on the stovetop or even canned chicken — just drain it well before adding)
  • One box of Aneto Natural Chicken Broth
  • 1 cup of frozen mixed vegetables
  • 1 cup of egg noodles (you can use dry egg noodles or the “homestyle” ones available in the freezer section at most grocery stores)

Start by simply sautéing your onion it a bit of olive oil (okay, you caught me….you need some oil for this recipe). Add chicken, vegetables and broth and bring to a boil. Reduce the heat and simmer for about 10 minutes then add noodles and cook according to their package directions or until al dente. Thats it!

Season to taste with salt and pepper (although that Aneto broth is so flavorful you won’t need much salt) and add a sprinkle of fresh or dried parsley as a garnish. This recipe serves four and makes an ideal lunch or dinner.

Description

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 cup cooked chicken breast*
  • 1 cup frozen, mixed vegetables
  • 1 quart Aneto Natural Chicken Broth
  • 2 cups of water
  • 1 cup egg noodles (dried or frozen varieties)
  • Salt & pepper to taste
  • Fresh or dried minced parsley garnish (optional)

Instructions

  1. Heat oil in a large saucepan over medium heat. 
  2. Add onion and sauté until soft and translucent, about 5 minutes. a
  3. Add chicken, vegetables, broth and water and bring to a boil. Once boiling reduce heat and simmer for 10 minutes. 
  4. Add egg noodles and cook according to package instructions or until noodles are al dente (about 5 – 10 minutes depending on type). 
  5. To serve, season with salt and pepper to taste and sprinkle with parsley if desired. 

Notes

*cooked chicken breast can either be from leftover chicken (such as a roast chicken or rotisserie chicken), a frozen chicken breast that has been thawed, diced and quickly sautéed in a skillet OR a 1 12.5 ounce can of cooked chicken breast that has been drained and rinsed
