I’ve been a midwesterner all my life and am pretty used to the gray drudgery of late winter. Even so, by late February, I always find myself actively searching for green. I’ll often take my laptop to our local conservatory so that I can sit among the palms while I work. This feeling extends to my diet too: after months of heavy pastas and rich stews, at this point in the season I’m ready to head to greener pastures (literally).

This Broccoli Spinach Soup is easy to make with just 5 ingredients and has a gorgeous green color. Top with fresh herbs and seeds to create a cold-weather answer to the Buddha bowl.

This soup is basically the best of both worlds — much like my Spring pea soup, this Broccoli Spinach Soup is bright and light, yet also warm and comforting.

Easy, 5-Ingredient Soup

Even better, its super, duper simple to make with just a few staple ingredients: onions, garlic, broccoli, spinach and broth. Once again, I’ve used Aneto Broth as the foundation of this soup. Their broths add so much more all-natural, homemade flavor than typical boxed broth. I chose their Low Sodium Chicken Broth, but this would also be delicious with Vegetable Broth if you prefer a vegetarian option.

To make the soup, simply sauté your onions and garlic in olive oil, add your broth, broccoli and spinach and allow it all to simmer for 15 minutes, or until the veggies are soft. Then use an immersion blender to get that wonderful creamy consistency. Thats it!

What to Serve with Broccoli Soup

This Broccoli Spinach Soup is delicious on its own but even better topped with a squirt of lemon juice, a dollop of plain Greek Yogurt, a pile of fresh cilantro and a sprinkle of toasted seeds for crunch (A few slices of crusty bread on the side wouldn’t hurt either!)

Description

This Broccoli Spinach Soup is easy to make with just 5 ingredients and has a gorgeous green color. Top with fresh herbs and seeds to create a cold-weather answer to the Buddha bowl.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 1 clove garlic, minced
  • 1.5 lbs broccoli florets (fresh or frozen)
  • 1 quart low sodium chicken broth
  • 4 oz. fresh spinach
  • Kosher salt & freshly ground pepper to taste
  • Optional Garnishes: fresh lemon juice, plain Greek Yogurt, fresh minced cilantro, toasted sesame seeds, shelled pumpkin seeds

Instructions

  1. Heat olive oil in a large heavy-bottom pot over medium heat. Add onion and sauté until soft, about 5 minutes. 
  2. Add garlic and sauté for one minute more. Add broccoli and broth and to pot. Reduce heat and simmer for 15 minutes, or until broccoli is tender. Add spinach and stir to combine. 
  3. Remove from heat and puree soup with an immersion blender or transfer to a standard blender and puree until smooth. Season to taste with salt and pepper. 
  4. To serve, garnish as desired with lemon juice, yogurt, fresh herbs and seeds.
