Date Night Gazpacho

This delicious Date Night Gazpacho recipe takes advantage of the best summer produce. Its a perfect date night meal since all the prep work can be done in the morning for easy clean-up after dinner!

Date Night — Some couples go out. We like to stay in. Don’t get me wrong — its fun to get gussied up and hit the town sometimes, but the effort to get a sitter, combined with the cost, often leaves Jon and I running for the couch. So, when Saturday rolls around, we put the kids to bed early and enjoy an evening together. Occasionally we order in, but more often than not, we cook together. For us, its sort of like dancing. We love lighting a few candles, pouring some wine and tucking into a wonderful meal on our back patio or on the living room couch in front of our latest Netflix obsession. Thats basically my perfect date night — with one hitch: kitchen cleanup! There’s no bigger buzz kill than finishing an amazing meal, leaning back in contentment and noticing a mountain of dishes waiting for you in the kitchen. Ugh.

 

That’s why this Date Night Gazpacho recipe is so perfect. There’s no actual cooking required– just a lot of veggie chopping and blending — and all the prep work takes place hours in advance, so when dinnertime rolls around there are hardly any dishes to deal with.

But the real appeal, of course, is the taste! This Date Night Gazpacho recipes one of my husband’s creations and its pretty incredible. He takes advantage of the very best of late-summer produce — tomatoes, cucumbers, onions and jalapeño, then layers on the flavor with the addition of fresh herbs, vegetable broth (we use Aneto broth because its flavor is unmatched unless you’re using homemade), ground cumin and Worcestershire.

Once we combine all the ingredients, we puree a few ladlefuls for a smoother texture, then stick the Gazpacho in the fridge to chill. The longer this soup chills the more the flavors mix together so its best to make it in the morning (or even the night before) and let it rest for at least a good 8 hours.

When its time to eat, we serve it with toasted bread and lemon wedges. If you’re feeling ambitious, toss some shrimp with garlic and butter and grill those up to go alongside. On a hot summer night, its just about the most perfect and romantic meal you could ask for.

Description

This delicious Date Night Gazpacho recipe takes advantage of the best summer produce. Its a perfect date night meal since all the prep work can be done in the morning for easy clean-up after dinner!


Ingredients

Scale
  • 2 cups ripe tomatoes, peeled
  • 1 red bell pepper, seeded and chopped
  • 1 jalapeno pepper, seeded and minced
  • 1 cup chopped cucumber, seeds removed
  • 1/2 cup red onion, minced
  • 2 cloves garlic, crushed
  • 1 teaspoon ground cumin
  • 1/3 cup olive oil
  • 1 cup best-quality vegetable broth (we use Aneto)
  • 1/2 cup red wine vinegar
  • 2 tablespoons Worchestershire sauce
  • 4 tablespoons fresh basil, minced
  • Salt & Pepper to taste

Instructions

  1. Core tomatoes and scoop out seeds. Dice tomatoes and place in a fine mesh sieve set over a bowl to catch juices.
  2. In another large bowl, combine bell pepper, jalapeño pepper, cucumber, onion and garlic. Add tomatoes and reserved juices, vegetable broth, cumin, olive oil, red wine vinegar and Worcestershire sauce. Stir until well combined.
  3. Transfer about 1/3 of the mixture to a blender and blend until smooth. Return puree to bowl with remaining soup mixture and stir until evenly mixed. Season to taste with salt and pepper.
  4. Cover bowl and place in the refrigerator to chill for at least 4 hours or overnight.
  5. To serve, ladle into bowls and garnish with fresh basil before serving.
