Authentic Italian Beef Made Easy in the Multi Cooker

This incredibly delicious Authentic Italian Beef Recipe is super easy to make in the multi cooker!

I have a bad habit of completely forgetting to cook some of my mom and grandma’s absolute best recipes. I guess because I’ve eaten them all of my life and my mom still serves them enough for me to get my “fix,” it rarely occurs to me to make things like Grandma’s Spaghetti Sauce or my mom’s spectacular Authentic Italian Beef. What a mistake!

Her recipe is spot on, easy to make and an absolute crowd-pleaser. It finally hit me last week when my in-laws decided to visit for Lillian’s 7th birthday. They were planning to arrive on a Friday evening and, since we were hosting a birthday party for 12 kids in the backyard the next morning, I needed to come up with something tasty and easy to serve. Authentic Italian Beef for the win!

When I say “Authentic” I mean it. The recipe was originally given to my mom by another family with Italian roots and these folks live in Southwestern Chicago — the place were Italian Beef was born.

Unlike many of the Italian Beef recipes floating around on Pinterest, this one doesn’t call for Italian dressing or a seasoning packet. Mom’s recipe is mostly just herbs, spices, vegetables and beef, slow cooked to perfection. I made a couple of tweaks, adding some Giardiniera relish and beef broth for even more flavor, but thats about it.

Once you brown your meat and add your veggies and herbs, you just let it cook down all day. When its time to serve, offer a big basket of crusty rolls and a variety of peppers and relishes — do not skip the Giardiniera and Pepperoncinis!

If you’re planning on cooking for a crowd and don’t feel like heating up your entire kitchen, this is the recipe you need. Round out the meal with a big batch of potato salad or chips if you’re keeping it simple. If you’re feeling ambitious, the crowd will go absolutely wild for a big pan of my Baked Rigatoni.

Authentic Italian Beef in the Multi Cooker

Description

This incredibly delicious Authentic Italian Beef Recipe is super easy to make in the multi cooker!


Ingredients

Scale
  • 4–5 lb. blade cut chuck roast
  • 2 teaspoons each salt & pepper
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 4 cloves of garlic, chopped
  • 3 tablespoons of dried basil or Italian basil/oregano spice blend
  • 1/2 cup chopped celery
  • 1/3 cup mild Giardiniera relish
  • 4 cups unsalted beef broth
  • 1 green pepper, sliced

To serve: Crusty rolls, hot and/or mild Giardiniera pepper relish, pepperoncini peppers, provolone cheese slices


Instructions

  1. Season roast with salt and pepper.
  2. Set multi cooker or instant pot to “Brown” setting. Add olive oil. When oil is hot and shimmering, add roast to pot.
  3. Sear roast for five minutes or until a golden crust forms on the outside of the beef. Flip roast and brown on the remaining sides.
  4. Add onion, garlic, spices, celery Giardiniera relish and beef broth. Secure lid on multi cooker and set to slow cook on high for 3 hours or low for 7 hours.
  5. Remove lid and shred beef using two forks. Add green peppers, replace lid and continue cooking for 1 more hour.
  6. To serve, offer warm, crusty rolls, provolone cheese and peppers alongside warm beef and allow guests to serve themselves.

Notes

To eat Authentic Italian Beef like a true Chicagoan, try your sandwich “wet”: dip your bun in the jus before adding meat and toppings!
