Sheet Pan Turkey Spinach Sliders with Roasted Veggies

I’ve reimagined one of our family’s favorite dinners as a convenient sheet pan meal. Sheet Pan Turkey Spinach Sliders with Roasted Veggies is a recipe you’ve got to try! 

Everyone in our house loves these flavorful little turkey slider burgers. I’ve made them in a pan on the stovetop for years.

While the original version is awesome, it occurred to me that I could get twice the mileage out of this recipe if I cooked the burgers in the oven on a sheet pan alongside a pan of veggies and potatoes.

They turned out great and saved some time along the way!

No matter which way you cook them, these unconventional little burgers are awesome.  Made using a combination of ground turkey, finely chopped baby spinach, green onions and spices, they are moist, flavorful and loaded with nutrition. Surprisingly, the little flecks of green have never bothered the kids one bit. All they see is a burger.

The slider size is a great portion too — the kids each eat one, while Jon and I usually have two. Served alongside a helping of roasted veggies, they’re a really delicious and satisfying meal.

The kids love their little sliders topped with standard burger toppings like ketchup. Jon and I like them topped with pickles, red onion and my easy sriracha mayo (this stuff is amazing).

One note of caution: I’ve called this a “Sheet Pan Meal,” but not a “One Pan Meal.” I highly recommend using two pans to ensure that the veggies and burgers have plenty of room to cook. You want the veggies to roast and if they’re too crowded together they’ll end up steaming. Line your pans with parchment paper and clean up will still be super easy.

Sheet Pan Turkey Spinach Sliders with Roasted Veggies is definitely a weeknight hit at our house — hopefully it will be one at yours too.

Sheet Pan Turkey Spinach Sliders with Roasted Veggies
Serves 4

Ingredients
4 tablespoons olive oil, divided
1 lb. golden potatoes, washed and diced
1 lb. broccoli florets
1 lb. cauliflower florets
2 cups loosely packed baby spinach, finely chopped
2 green onions, nely chopped
1 lb. ground turkey meat
1 teaspoon cumin
1 teaspoon kosher salt
1 teaspoon fresh ground pepper
1 tablespoon Worcestershire sauce
8 slider size buns or dinner rolls (we like pretzel or brioche)
salt & pepper to taste

Instructions

  1. Preheat oven to 400 degrees F. Line two large, rimmed baking sheets with parchment paper. Spread potatoes on one of the baking sheets and drizzle with olive oil and a sprinkle of salt and pepper. Bake potatoes for 15 minutes, until they start to brown.
  2. While potatoes are baking, in a large bowl, combine ground turkey, spinach and green onions. Add cumin, salt, pepper and Worcestershire sauce and gently mix until evenly combined. Form mixture into 8 slider size burgers. Arrange burgers on the second baking sheet and drizzle with 1 tablespoons of olive oil. Place pan in the oven.
  3. Remove baking sheet with potatoes from the oven. Move potatoes to one side of baking sheet and add broccoli and cauliflower. Drizzle veggies with 2 tablespoons of olive oil and a sprinkle of salt and pepper. Return to oven and continue baking, along with the slider burgers for 15 minutes, until veggies and potatoes are golden and burgers are cooked through.
  4. Remove pans from oven. Serve turkey burgers on buns with desired toppings and veggies on the side.
