Cranberry Curry Greek Yogurt Chicken Salad

Holy Holiday Hangover! Did December leave anyone else feeling frazzled and slightly bloated? After two full weeks of family holiday togetherness, fun and FOOD, I am officially ready to get back into the groove. Starting with meals. Dinners this week kicked off with Teriyaki Salmon & Rice Bowls and Ramen Noodle Soup. For lunch, I’m all about easy salads. Especially my absolute favorite Cranberry Curry Greek Yogurt Chicken Salad.

Its a mouthful to say, but a tasty mouthful for sure! Swapping Greek Yogurt into traditional chicken salad (or tuna salad) is such a game changer. It adds a subtle tang that I love so much more than mayo. For this version, I also added a pinch of muchi curry powder (any Indian-style curry powder will do the trick), plus dried cranberries, fresh lemon juice and green onions. Thats it. You can also add celery if you want to but I don’t care for raw celery so I never do.

You can also adapt this recipe to make a fantastic tuna salad. For that, just swap in a can of drained Albacore tuna and skip the curry and cranberries. Either version tastes great on salad greens, with crackers or on a sandwich (I’m partial to raisin toast to go with the Cranberry Curry Chicken Salad, or toasted rye for the tuna).

Now that the kids are back in school, I’m doing my best to get back on track with a regular post schedule. Cranberry Curry Chicken Salad
Serves 2

Ingredients
1 boneless, skinless chicken breast, fully cooked and diced
1 green onion, finely diced
2 tablespoons dried cranberries
3 tablespoons low fat plain greek yogurt
1 teaspoon curry seasoning
Juice of 1 lime
Salt & Pepper to taste

Instructions

  1. In a medium bowl, combine chicken, green onion, cranberries, Greek Yogurt and curry seasoning. Add lime juice and toss until evenly combined. Add salt and pepper to taste.
  2. Cover mixture and chill in refrigerator until ready to serve.
  3. Serve on a bed of lettuce, with crackers or as a sandwich on slices of your favorite toast.
