Super Green Broccoli, Spinach, Feta Pizza Recipe

This Broccoli, Spinach, Feta Pizza Recipe is seriously one of my favorite weekday lunches. Especially in the Spring. The colors and flavors are so vibrant. Its definitely health food — but also pizza!!

This is the kind of meal I categorize as “Mom Fuel.” Its easy to make for a quick weekday lunch, super healthy and yummy. And….no one else in my family will touch it. Like most children, mine are like magnets whenever their mother tries to eat a meal. “Mom, can I have a bite?? Just a taste Mom? Mom?” And suddenly my meal is GONE and I’m still hungry. Not this time: You see, even though my kids are pretty adventurous eaters, they have very strict ideas about what belongs on a pizza. This combo breaks all of those rules. Fine by me. This pizza is all mine.

The time-saver here is the crust. I love these Sprouted Grain Flatzza’s from Angelic Bakehouse. I started buying them last year after partnering with Angelic on a culinary project. Now we keep a stash of these crusts in the fridge for quick, healthful meals. They crisp up really nicely in the oven and have a nutty flavor that works really well with the brightness of the green veggies and feta cheese. Plus, I can throw all my toppings on one of these suckers, toss it in the oven and dig into a hot and healthy lunch in under 10 minutes.

You’ll be hearing more from me about Angelic Bakehouse in the coming weeks. They’ve asked me to manage their product sampling program at the Natural Products Expo West trade show in Anaheim, CA next month. This is such an exciting opportunity on so many levels — right now I’m developing and photographing six new and yummy recipes using their products. And in a few weeks I’ll be traveling out to California to prepare and serve these recipes to hundreds of trade show attendees. I’m so excited for the opportunity but also a little nervous – this trip will be the longest and furthest I’ve been from my family since having kids. And one of only a handful of times I’ve put on my chef’s jacket and gone into culinary pro mode in a while (I do most of my cooking in my pajamas).

Between this project, all the extra effort I’ve been putting towards Homemaker’s Habitat and my usual gig writing for The Inspired Home, I’m feeling a little more scattered than usual. That’s when this Broccoli Spinach Pizza and other “Mom Fuel” type meals become so incredibly important. If I can just remember to stop and eat something nutritious, hopefully I can hold it together enough for my family to forgive the piles of laundry and my hair to stay where it belongs.

Broccoli, Spinach, Feta Pizza
serves 1 – 2

1 Angelic Bakehouse Buddy size Flatzza
1 tsp olive oil
1/4 cup baby spinach leaves, chopped
1/4 cup broccoli florets, chopped and steamed
1 green onion, chopped
1 small ball fresh mozzarella cheese, torn into pieces
1 tablespoon feta cheese
Garnishes: fresh lemon juice, salt and pepper

  1. Preheat oven to 425 f.
  2. Place Flatzza on a baking sheet. Brush lightly with olive oil. Spread veggies evenly over the top of the crust. Add cheeses in an even layer.
  3. Bake pizza for 8 minutes, until cheese is melted and just starting to turn golden and crust is crisp.
  4. Garnish with juice from half a lemon, salt and pepper. Eat immediately.
