Yogurt Parfait Breakfast Popsicles Recipe

When Cuisipro asked me develop some recipes for their new Mini Popsicle Molds, I knew right away that one of them needed to be a breakfast pop. These are packed with whole grains, protein and fruit from Greek yogurt, fresh berries and granola. On busy weekday mornings, they take all the fighting out of breakfast. Running late? Eat a popsicle.

Now, when does school start?

Yogurt Parfait Breakfast Popsicles
Makes 4 “mini” size popsicles

Ingredients
½ cup (118 ml) fresh mixed berries (such as hulled, diced strawberries, blueberries and raspberries)
1 cup (237 ml) plain Greek yogurt
¼ cup (59 ml) granola cereal
4 tsp (20 ml) honey (or to taste)

Instructions

  1. Layer a small quantity of berries in the bottom of each popsicle mold. Add a layer of yogurt, followed by a sprinkle of granola and a drizzle of honey. Continue layering ingredients until the pop molds are nearly full.
  2. Cover each popsicle mold securely with stick and place in the freezer for at least 4 hours or overnight.
