Cold Soba Noodles from Weelicious

I rarely make recipes verbatim without putting my own spin on things, but when I do with good results I like to give credit. 

Tonight I made the Cold Soba Noodles recipe from Weelicious and they were indeed deemed delicious by my wee one. As I’ve stated, Lil’s in a picky phase so any veg consumption is a victory right now. Getting her to try veggies in their most unadulterated, veggirific form has been frustrating so seeing her willingly chomping red pepper strips, munching carrots and eating tofu was a welcome sight. 
I’m not reprinting the recipe here because, other than swapping out some veggies for what I had on-hand (carrots, cucumber, snap peas and radish) I made the recipe as-is. 
Anyway, it was a very tasty, summery recipe worth checking out. As is the entire Weelicious site.

    I'm so proud of you!! I hope one day to be a parent who has their kids eat "real" food. A toddler eating veggies (awesome!), noodles (and not the mac n cheese kind) and tofu (I hardly do that!). You amaze me!

    Thanks MeggiPi. Its a work in progress and everyday is different but I keep trying with her. She rounded things out with roasted seaweed snacks (my version of chips), so I'm feeling pretty happy with today. Yesterday was box mac though 🙂
