Insanely Easy Panko and Parmesan Crusted Chicken

This is the best chicken recipe ever and it takes four ingredients and thirty minutes to make.  I literally make this at least once a week now. As long as I’ve got the ingredients in the house, its so easy to throw this together while Lilly is coloring or watching Sesame Street. Add some couscous and a side of veggies and dinner is ready. And ridiculously delicious!


To be honest, I think you can find an eerily similar recipe on the back of the Hellman’s jar. My version is basically something I just pulled together, but its essentially the same idea. All it takes is chicken, a little mayonaise, parmesan cheese, and panko crumbs. That’s it. 


The key is the mayonaise. Its not a huge amount but it does something magical to the chicken. It bakes up juicy on the inside, crispy on the outside and addictively flavorful. Lilly gobbles this up, JiT gobbles this up. Everyone gobbles this up. And it takes no time at all to prepare. Its incredible. 


Its not just good with chicken. The recipe works great with fish too…cod, tilapia, barrumundi…basically any mild, flaky white fish. Just add a squirt of lemon juice. Once again, it works magic. Everyone at our house inhales this meal. Weekly.

Panko and Parmesan Chicken
Serves 4


4 boneless, skinless chicken breasts
2 Tablespoons mayonaise (I like Hellman’s)
2 Tablespoon parmesan cheese, shredded
1/2 cup panko bread crumbs
Olive oil mist or cooking spray
Salt & Pepper


Preheat oven to 425 degrees F. Spread a baking sheet with parchment paper (or foil) and spray lightly with olive oil or cooking spray. Place chicken breasts on the baking sheet.


Season chicken lightly with salt & pepper. Spread about a half Tablespoon of mayonaise evenly over the surface of each chicken breast. Divide parmesan cheese and panko crumbs between each chicken breast and sprinkle evenly over each chicken breast. Gently press the panko crumbs into the mayonaise to help them stick. Spray tops of chicken breasts lightly with olive oil or cooking spray. 


Place baking sheet in center rack of oven and bake until crust is golden and chicken is cooked through, about 20 to 30 minutes.
