Early Morning Banana Oat Muffins

For those not “in the know,” ringworm is a misnomer. It has nothing to do with worms or rings but is actually a fungus similar to athletes foot. Gross. Its also quite contagious, especially to babies, thus requiring yet another round of laundry and psychotic house cleaning. I swear we wash our sheets more often than a hotel these days. As for Zoey, the poor girl will require twice-daily treatment with an anti-fungal spray for at least four to six weeks until things clear up. Hence the banning from our bed. She seems quite insulted…I think she considered her spot in bed as her last exclusive privilege now that Lillian gets so much of our time and attention. With that gone, our early-morning cuddle sessions must now take place out on the couch. Which is exactly where I found myself at 5:25 this morning (it took a while but I got back to it).

In my irritation with the situation, I may have been just a tad bit snippy to JiT while getting out of bed. Not sure if he felt sorry for me or if he was just too awake to stay in bed but before I knew it, the coffee was made and he’d joined us on the couch (along with his work laptop, yuck). Lillian, ever the social butterfly, rose to the occasion shortly thereafter. And there we all sat. At 6 am on a Saturday. Wide awake. With the breast pump buzzing away. Welcome to our life.

Of course, as soon as the parents were thoroughly caffeinated, both the baby and the dog fell back to sleep again. At this point, I figured it was a good excuse to bake (it only took five paragraphs but I got to the muffins!). I had an overripe banana in the freezer and figured that was a good place to start. Ever fearful of the dreaded Mid-Recipe Baby Meltdown (MRBM??), I chose a quick and easy muffin recipe: Banana Oatmeal. The banana makes them moist and flavorful, the oatmeal gives them a heartiness. Hints of cinnamon add spice while pecans contribute a nice crunch. I made them with almond milk (dairy free for those that care!) because I had it in the house. It added some nice flavor but they’d probably also be delish with regular milk.

Banana Oatmeal Muffins
Makes 6 regular size muffins
3/4 cup all-purpose flour
1/2 cup oats
1/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cinnamon
1 egg white
1/3 cup vanilla flavored almond milk (or regular milk)
5 Tablespoons vegetable oil
1/4 teaspoon vanilla extract
1/2 cup mashed banana (about one medium banana)
1/4 cup chopped pecans plus 6 whole pecans for garnish (if desired)
Preheat oven to 400 degrees F. Spray a six-well muffin tin with cooking spray (or line with paper liners).
In a medium bowl, combine flour, oats, sugar, baking powder, baking soda, salt and cinnamon. Set aside.
In a small bowl, stir together egg, milk, oil, vanilla and mashed banana until will blended. Pour wet ingredients into dry ingredients and stir just until all the dry ingredients are incorporated and the mixture is well combined. Add the pecans stirring just enough to distribute evenly through the batter.
Using a trigger ice cream scoop, divide batter into muffin cups. If desired, top each muffin with one whole pecan. Place muffin tin in center of the oven and bake for 20 minutes or until muffins are golden brown. Cool slightly before removing from tins. Serve warm or room temperature (with lots and lots of coffee).

    You poor thing and poor Zoey! Hopefully she's better soon. In the meantime, I love banana muffins so their appearance on the blog is fantastic.
