We served the fish over truffle mashed potatoes (JiT helpfully boiled the potatoes while I was still at class, then added some sour cream, milk, a touch of butter and a teaspoon of truffle oil and mashed to creamy perfection). I wasn’t entirely sure how the truffle potatoes would blend with the light, bright flavors of the salsa but they were a really great match. In fact, after I finished my fish, I had another tiny helping of just potatoes and salsa.
Seriously, this dinner was ready in far less than 30 minutes and it was pretty darn healthy (okay, the potatoes could probably lighten up, but the fish and salsa?!). A meal like this on a Monday will definitely perk up your week!
