The recipe made 11 cupcakes (could probably have gotten 12 if I’d been more careful with distribution) and all but two were gone by Monday morning, so I think they were a hit. The recipes have been shown here before, so just follow the links. You’ll note that the buttercream recipe is for 24 cupcakes, so cut that one in half (or double the cupcake recipe!).
Labor Day already seems like an ancient memory, so I apologize for the delay in posting. I’m travelling for business this week, and prepping for a huge meeting next week, so I’m a little lax on cooking and posting right now. I promise I’ll be back on track by mid-Sept.
In the meantime, I wanted to share this bright, happy little cupcakes I made while visiting my almost-in-laws over the holiday weekend. My almost-in-laws and my 4-year old almost nephew had an appointment on Saturday morning, JiT decided to give the Jeep a good washing, and I didn’t have a whole lot to do. So I raided the cupboards, decended upon my MIL’s gorgeous granite-topped, double-ovened, kitchenaid mixer-stocked kitchen and went to work.
I decided on vanilla for selfish reasons — they’re my favorite (plus they’re about the easiest to make when you’re raiding someone else’s pantry for ingredients). I used Noor’s cupcake recipe, which she submitted for the cupcake challege last week.
For the frosting, I considered branching out, but once I found these nifty edible glitter sprinkles in the cabinets, and realized I had all the ingredients for my favorite no-fail vanilla buttercream, thats what I went with.
I hope everyone had a fabulous, relaxing holiday weekend…and more importantly, I hope it doesn’t seem like ancient history yet! Promise to share some NEW recipes and other fun in coming days. Meanwhile…I miss you guys!
