First of all, I want to thank everyone for the well wishes and kind words this past week after my big “win”. Its been a little bit overwhelming thinking about such an amazing trip and how to work that in with our original honeymoon plans…but its exciting! I’ll keep you posted as we figure out our plans. In the meanwhile, JiT and I have just been trying to catch our breaths, which leads me to this post.
JiT and I had a fabulous day on Saturday. He woke up with a taste for pancakes….but not just any pancakes. He wanted multigrain pancakes with pecans….and blueberries. Oookay.
We went out for a jog and made a stop at the farmer’s market for some fresh blueberries, followed by a quick trip to the grocery store for whole wheat pancake mix. I don’t normally use a mix, but we didn’t see a proper multigrain flour blend that would work for pancakes, and I really didn’t feel like searching for a recipe that morning. So, Aunt Jemima came to the rescue with a whole wheat pancake mix.
To that we added a handful of pecans and, for some extra texture and sweetness, a handful of sweetened, flaked coconut and a dusting of cinnamon. Then I used a small ladle to scoop them onto a buttered cast iron griddle and dotted the batter with fresh blueberries.
Truthfully, I was a little afraid that they would turn out heavy because of the whole wheat flour, but they turned out fluffy and light. And with all the flavors and textures mixed in, the flavor was amazing. We topped them with whipped butter and real maple syrup and enjoyed them while reading the paper and watching the end of the Olympics. I just love Sundays!
I’m not going to post a recipe, since its really just a matter of following the instructions on the Aunt Jemima box, then tossing in whatever goodies you feel like adding. Feel free to experiment.
